This is Dali | Episode 58: Binchuan pickled chives
Mekong News Network|
The "natural greenhouse" of the dry-hot valley of the Jinsha River nurtures Binchuan pickled chives—a one-of-a-kind delicacy found nowhere else.
The Binchuan county is west Yunnan’s Dali prefecture.
Pickled for a full month using traditional methods, the chives are plump and firm, yielding a pleasantly sour and spicy flavor.
This rustic flavor is tempered by time, and it will make you remember Dali with just one bite.
