The milk fan, or rushan in Chinese, is one of the 18 Yunnan oddities. It’s a local cheese specialty. When fresh milk meets acid whey, it will curdle and be transformed into paper-thin slices of milk fan.
Grilled over charcoal, the milk fan turns crispy, fragrant, and wonderfully stretchy. This is the Bai people’s heartfelt gesture of hospitality—and a most savory taste of Dali’s daily life.
