Deep in Qujing: Steamed rice noodles, an intangible cultural heritage
When it comes to classic dishes from Qujing, most people would immediately mention “Qujing Steamed Rice Noodles”!
This special snack can be traced back to the 1980s and has become a favorite among locals, earning a reputation throughout Southwest China. In 2017, Qujing Steamed Rice Noodles was even included in the provincial intangible cultural heritage list of Yunnan.
Qujing rice noodles are distinctive, made from high-quality rice sourced from the riverside areas of Qujing. Locals process the rice into “tube-shaped rice blocks,” which are then sliced into fine noodles. The freshly cut noodles are pure white, delicate, and soft. They are tossed with vegetable oil and steamed for 2 to 3 minutes before being topped with chopped green onions, pickled vegetables, bean sprouts, and stir-fried leeks. A spoonful of braised meat sauce and a drizzle of secret soy sauce are added, creating a colorful and aromatic dish. The first bite reveals a delightful chewiness that lingers, leaving an unforgettable aftertaste.
